If you're an undergraduate completing a nutrition or dietetics program and need an upper-level human nutrition course, FSHN 530 may be exactly what you're looking for. Many students come to this course because of scheduling conflicts at their home institution or because they need a flexible online option to finish their requirements and stay on track for a graduate program in dietetics or a dietetic internship.
The course covers content appropriate for any ACEND-accredited program pathway, and CSU students may take FSHN 530 in place of FSHN 350. FSHN 530 also serves a broad range of health professionals and graduate students. Past enrollees have included physicians, physician assistants, nurses, dentists, physical therapists, exercise physiologists, health educators, health coaches, personal trainers, and others in lifestyle medicine or wellness-related careers. Graduate students outside of nutrition who need an elective, extension professionals, and lifelong learners with a college science background will also find this course valuable.
Considering CSU's Master's of Advanced Practice in Dietetics (MAPD)? FSHN 530 can serve as a prerequisite for the program, giving you a chance to experience CSU's online nutrition coursework and build your foundation before applying. Designed for working professionals and busy students alike, this 8-week asynchronous course lets you engage with material on your schedule while still benefiting from small-group discussions and direct instructor feedback. You'll work with peer-reviewed research, current textbook material, and real-world case applications.
Assessments include quizzes, discussions, homework, and exams. Class sizes are intentionally small, creating a cohort of diverse learners from different professional backgrounds and career stages. Weekly reading assignments come with regular knowledge checks so you can track your understanding as you go.

Dr. James Peth is an award-winning educator and assistant professor in CSU's Department of Food Science and Human Nutrition and the Colorado School of Public Health. A nationally board-certified health and wellness coach with advanced training in nutrition science, metabolism, physiology, and public health, he brings both clinical depth and a practical teaching style to his courses. He teaches across undergraduate and graduate programs, including FSHN 150, FSHN 271, FSHN 272, FSHN 350, FSHN 470, FSHN 530, FSHN 551, and FSHN 552.
He also directs CSU's Integrative Wellness Coaching Program, which prepares students for national board certification (NBC-HWC), and contributes to CSU's Master's of Advanced Practice in Dietetics (MAPD). His teaching emphasizes evidence-based practice, critical thinking, and helping students connect nutrition science to the work they do with real people in real settings. His applied research explores food-as-medicine strategies for chronic disease populations, including individuals with spinal cord injuries.
