View available sections
Food allergies can have a significant impact on a person’s day-to-day life and how one navigates the food world. It is important to understand how to best manage food allergies whether you have an allergy, live with someone who has an allergy, or work in a public environment such as a school or restaurant to ensure safe practices are in place. The Kendall Reagan Nutrition Center offers online training to help you understand the fundamentals of food allergies and their management.
Learn skills to manage the nine major food allergens recognized by the Food Allergy Safety, Treatment, Education, and Research (FASTER) Act including milk, eggs, fish, shellfish, tree nuts, peanuts, wheat, sesame, and soy. This online training program features 9 courses, each designed to provide knowledge related to one of these major allergens. In this program, you will have the opportunity to:
·    Identify possible allergy symptoms
·    Recognize incidence and risk factors for an allergy
·    Identify the validated methods used to diagnose an allergy
·    Recognize the lifespan of allergies
·    Identify what foods are likely to contain different allergens along with how to read nutrition labels for allergy safety
·    Identify safe practices for cooking at home and eating out
·    Identify safe food substitutions for allergens

Learners will also receive practical tools like food lists, tips for eating out, strategies for allergen-free cooking, a sample meal plan, and several allergen-free recipes in each course.
