FSHN 552 - Advanced Nutritional Science--Micronutrients

  • 3 credits

Micronutrients (vitamins and minerals) in animal and human models, considering structures, functions, absorption, metabolism, and interactions with other nutrients, from the cellular/molecular/biochemical level through whole-body homeostasis and relationships to health and risk of disease.

Senior standing. Credit not allowed for both FSHN 550 and FSHN 552.

Prerequisite

(BC 351 or BC 403); (BMS 300 or HES 300); (FSHN 350 or FSHN 530).

Dr. James Peth is an award-winning educator and assistant professor in CSU's Department of Food Science and Human Nutrition and the Colorado School of Public Health. A nationally board-certified health and wellness coach with advanced training in nutrition science, metabolism, physiology, and public health, he brings both clinical depth and a practical teaching style to his courses. He teaches across undergraduate and graduate programs, including FSHN 150, FSHN 271, FSHN 272, FSHN 350, FSHN 470, FSHN 530, FSHN 551, and FSHN 552.

He also directs CSU's Integrative Wellness Coaching Program, which prepares students for national board certification (NBC-HWC), and contributes to CSU's Master's of Advanced Practice in Dietetics (MAPD). His teaching emphasizes evidence-based practice, critical thinking, and helping students connect nutrition science to the work they do with real people in real settings. His applied research explores food-as-medicine strategies for chronic disease populations, including individuals with spinal cord injuries.
